Tiramisu is probably one of the most known and liked desserts in the world. It fits to any social gathering event, it is easy to do and it simply tastes delicious. Usually, ladies would battle who knows the best recipe and what the twist is they do to make it better than all the other ones.
On one of those occasions, my friend Julia would bring this Tiramisu which is simply the best one I ever ate. By then I didn’t know why exactly it had this nice taste and texture – so I bothered her as long as I could to give me the recipe. This one I share with you.
You will need for one full tray:
- 3 Eggs
- 100g White Sugar
- 250 ml Whip Cream
- 500g of Mascarpone (or 250 g of Mascarpone and 250g of Curd/Ricotta/Cottage Cheese – in those countries where available)
- 1 Pack of Ladyfingers (50 – 60 Pieces)
- 1 Small Tray of Raspberries
- Cocoa Powder
Prepare a large cup of Coffee and set aside to reduce heat.
Put eggs and sugar into a bowl and beat until fluffy/light. That might take some minutes. Fold the mascarpone/curd to the batter – please don’t use a hand mixer to do so but use your wire whisk.
Whisk the whipping cream until thick. Slowly put in the egg & mascarpone mixture and fold under the whip cream. It will get a nice and creamy batter.
Take out a nice looking pan in which you want to serve your Tiramisu in.
Dip both sides of the ladyfingers briefly into the coffee and create a first layer in the pan
by arranging the ladyfingers side by side. Pour some of the batter onto the ladyfinger until they are covered. Add another layer of ladyfingers dipped in coffee and create a 2nd layer. Add some raspberries in between.
Move on with alternating batter and ladyfingers until you a) either finish the ladyfingers/batter or b) the pan is full. Add raspberries where convenient (only a few are required)
Make sure the last layer is a batter layer. Add cocoa powder on top and let the Tiramisu rest for some hours.
Add some raspberries on top for the show.
