Tangy Tuna Pasta
When I ask my boyfriend what he wants to have for dinner he will always respond: Tangy Tuna Pasta. This recipe always works and usually all ingredient are there in your fridge – even if it is a Sunday. This dish I always do on a lazy Sunday. I promise you it tastes fantastic despite its simple ingredients and you will run into the risk of overeating!
Serves 2 hungry Couchpotatoes:
- Half a package of Spaghetti/Spaghettini
- 1 Tin of Tuna (in oil or in water)
- 300 g of Fresh Tomatos or a tin of Tomatos (preferably chopped or whole)
- 1 big Onion
- 1-2 cloves of Garlic
- Salt & Pepper
- Chili flakes
- Dried Basil if available
- Olive Oil
- Mozzarella or Parmesan cheese
Chop the onions and the garlic into small cubes. Chop the tomatoes into half or simply open the tin.
Heat some olive oil in a pan and add the onions and garlic. Fry and stir until it has a nice golden colour.
In the meantime bring a large pot of water to a boil – then add a pinch of salt and add the noodles – follow the instructions of the noodle provider to get this job done (for everyone : it usually indicates on the package how long the noodles need to boil! You don’t need to add oil to the noodles so they don’t stick – just use enough water and stir the noodles once in a while.
After your onions got some colour, add the tomatoes and let it simmer for some minutes.
Add the tuna into the pan (whole thing) and add generous amounts of Salt & Pepper, Chili flakes and dried Basil to it. Let the whole thing simmer until your noodles are done (approx 10 – 15 min in total for everything).
Put your noodles on a plate, add the tuna sauce, top with Mozzarella or Parmesan. But some green leave on it (any green leave will do) , grind some pepper.
Job Done – time to relax on the couch!
