Bumpin’ Pumpkin Soup
Why do we know summer is over? Exactly, because we find all of those pumpkins in the supermarket. I can’t think about any other veggie that represents the beginning of Autumn as much as pumpkins do. I might sound blunt but I really think Austrians like to follow the season therefore you will find many restaurants who are offering this awesome soup paired with some original pumpkin seed oil.
When you are questioning what you can do with a whole pumpkin I got many ideas for you:
Soup, Pumpkin Stew, Pumpkin Cake, Mashed Pumpkin Mousse …. and if all of this still leaves you with some pumpkin left, just chop it and freeze for later days.
The soup works easily for 6 PAX. I made the experience that most people like to have two portions.
- 300 -400 g of Pumpkin (Chopped into thumb-thick pieces, peeled and de-seeded)
- 750 ml of Water
- 2 Onions
- Splash of Olive Oil
- Zest of Orange
- 1/2 Piece of Stock Cube (Vegetarian)
- Pinch of Sweet Pepper
- Pinch of Salt & Pepper
- 100 ml of Milk
To your liking
- Pumpkin Seed Oil
- Sour Creme
Finely chop the onions and make sure the pumpkin pieces are all set and ready.
Set up a large pot, put in a splash of olive oil and bring to heat. Add the Onion and roast until nice & golden. Make sure they don’t get too brown.
Add the Pumpkin to the Onions and briefly roast the Pumpkin for around 2-3 minutes.
Add the Water, Red Pepper, Salt&Pepper, Orange Zest and the Stock Cube. Let the whole thing simmer for around 20 mins so the Pumpkin gets soft. If you feel that there is too less water in the pot, just feel free to add more.
Once the Pumpkin is soft, use a hand mixer to grind the whole mixture. Ideally the whole thing gets a thick soup. Once that is done, add some milk to the soup to lighten it up and maybe even a bit more water.
Add Salt & Pepper to your liking. If you have the time to do so, you can cool the soup off once and re-heat. This will intensify the flavour of the Pumpkin.
I would usually add one spoon full of Pumpkin Seed Oil for the taste if this is on hand. I also kind of like a small spoon of Sour Cream now and then. Done 🙂 Yeah, it can be that fast.
