Mediterranean Noodle Salad
Somehow the Mediterranean Noodle Salad has become a very popular dish among Bring-your-own Braai, BBQ events, Birthday Parties or the like. Almost every time I would have someone bringing along this salad. So time to reveal the basics of doing it – in fact it is extremely simple.
I am not a big fan of the classic styled noodle salads, they usually have Mayonnaise as a salad dressing base – combined with Ham and Corn and even pickles, I somehow can’t take it.
So the Mediterranean Style one comes in handy – it is light and fresh and gives countless options to pimp it.
I am starting with a very basic version of the salad – I strongly recommend to get creative – add bacon bits, different nuts, different pestos, semi-dry tomatoes, olives – indefinite number of variations.
For a nice bowl that serves around 4-5 people at a BBQ take the following ingredients:
- 250 g Noodles (dry weight – Penne, Rigatoni, Farfalle,… the like) – thats a bit more then half the usual package size
- Pack of Cocktail Tomatoes
- 1 Ball of Mozzarella (Mini Mozzarella in this case)
- Whole bundle of Rocket Salad
- Pine Nuts
- Generous Portion of my Leftover Pesto (or a Pesto you have in your fridge)
- Olive Oil
- Salt & Pepper
Bring the large pot with water to a boil, add some salt and cook your noodles to well done. Set aside for a while to cool down or be even smarter, prepare it some hours/a night before.
In the meantime roast the Pine Nuts without oil in a pan until a lightly golden.
Just add the ingredients you like – my preferred style goes with Rucola, Mozzarella, Pine Nuts and Rocket Salad.
My friends like to have Prosciutto or Bacon Bits inside and also most times they would add some semi dry tomatoes or Parmesan. Feel free to get creative. You can’t go much wrong with this salad.
Before my friends arrive for BBQ I usually only add then the Pesto, Salt & Pepper and some further Olive Oil to the dressing. As for most of the salads, the dressing is just added at the very last.
