Most people are considering to buy unexciting “Green Pesto” when buying off the shelf- some more sophisticated people might even buy based on the original name ‘Pesto al Genovese’ . But what most of the pesto lovers have in common: they buy it in the supermarket and they don’t touch it for months. As soon as they want to do another dish with pesto they take it our of the fridge, inspect it and hope nobody falls sick who will eat it next.
So think about having a fresh pesto for your pasta at any point of time – with as little effort as you can possibly imagine – would you then still be worried? Nah, no need: All you need for that “Green Pesto” you have most likely already in your fridge.
- Proper amount of ‘green leaves’ such as rocket or Baby Spinach, Basil Leaves, Italian Parsley, Asparagus not to forget….
- Good handful of nuts such as Salted Peanuts (my favourite), Roasted Pine Nuts, Brazilian Pecan Nuts….feel free to add Hazelnuts, Almonds, Walnuts…. Dig deep in your kitchen cabinet
- Chunk of Parmesan
- A decent pour of Olive Oil
- One Clove of garlic (peeled)
- Pinch of Sea Salt
Put all of it together into a grinder/mixer and grind thoroughly.
Can you imagine – already done ! Enjoy with pasta , on bread, on top of your mozzarella and tomatoes or simply with your cold cuts platter – believe me it will beat anything you can buy off the supermarket shelf.
Pimp It: Use Basil & Pine Nuts in a combination or add some zest of lemon to the mixture. There is no limit to your creativity.
