American Style Pancakes are hugely popular nowadays therefore I am going to neglect a little bit my heritage today and prepare them right in the way as I would expect them to be served outside of Austria. We will be coming back to Austrian style Pancakes, widely known as Palatschinken.
I promise that neither for the US nor the Austrian style Pancakes you need more than 15-20 mins (even if not trained). I usually prepare them in around 10 mins. Challengers welcome.
Recipe works for 2 PAX // 8-10 Pancakes
- 150-200 ml Buttermilk (thats a good half full Starbucks Cup)
- 150 -200 g of Plain White Flour (similar half a Starbucks Cup)
- 2 Tablespoons of Sugar
- 2 Eggs
- Pinch of Salt
- Butter (for your Pan)
- Optional, but very much recommended: Fresh Berries such as Raspberry, Blueberry, Strawberry or Bananas.
Whisk the eggs & sugar in a bowl so they get a bit foamy and slowly add the buttermilk. Add the flour & salt to the batter and whisk lightly. Don’t overdo it. Is just enough when you still can see some flour sprinkles in the batter. If you feel you have not enough flour/fluid…. adjust. If you are having some berries on hand just put them into the batter. Otherwise add them later on top.
Heat a pan, butter it (lightly!) and fry the small scoops of batter until lightly brown -on both sides of course.
You can add some fruits for the show. Use maple syrup or some icing sugar if you want the Pancakes more sweet. As you have added already some sugar into the batter, sweetness is already there.
